Chicken & Veggie Rice with Raisins and Currants

This is literally going to be the most mouth watering Chicken & Veggie Rice you’ll ever have! The flavours that burst into your mouth with each spoonful will leave you speechless!
It consists of Basmati Rice with hand shredded Chicken, Peas, Corn, Carrots and of course the highlights of this dish, Raisins & Currants.
You can enjoy the rice alone or like I did, with home fried Lebanese bread, topped with garlic yogurt and a whole heap of fried nuts 😋

The Chicken

1kgBreast Chicken

3 TbsGhee
Butter

1onion

3garlic cloves

5bay leaves

4star anise

2 tspsalt

1 tspblack pepper

1 tspgarlic powder

1 tsponion powder

1 tspturmeric

1 tspsweet paprika

1 tspVegeta

1 tspkabsa seasoning mix

½ tspcinnamon

1.5lwater

The Rice
Instructions
The Chicken
Step 1
Lightly sear Chicken on both sides in the Ghee over high heat.




Step 2
Season with all the spices, then add the boiling Water, Onion, Garlic Cloves, Bay Leaves and Star Anise.













Step 3
Bring to a simmer, lower the heat, cover and cook for 40 minutes on stove top, or pressure cook for 20 minutes.


Step 4
Remove Chicken and allow them to cool, then hand shred them.


Step 5
Remove Onion and Garlic and set aside. Pour the Chicken stock into a bowl and set aside (used to cook the rice). Discard of Bay leaves & Star anise.


The Rice
Step 6
Wash Rice until the water is clear, then cover with water and set aside for a minimum of 20 minutes.


Step 7
Heat Canola over high heat (in the same pot or pressure cooker) and cook the Onions, Garlic and Ginger.




Step 8
Add the Onion & Garlic that were set aside from the Chicken and cook for a further 2 minutes


Step 9
🔸Add the Mixed Veggies and Tomato paste.




Step 10
Add the shredded Chicken and mix.
Step 11
Strain and add the Rice.

Step 12
Add the Chicken stock, then season with Salt, Kabsi spice, Vegeta, Turmeric and mix well.




Step 13
Bring to a simmer, lower the heat, add the Raisins and Currants, cover, and cook for 18-20 minutes or until Rice is cooked. Allow to sit for 5 minutes before serving.




The Fried Lebanese Bread, Garlic Yogurt & Fried Nuts.
Step 14
Cut Lebanese bread and fry until golden.
Step 15
Whisk yogurt until smooth, add water to thin (to your liking) then add crushed Garlic and Salt to taste.
Step 16
Fry Almonds and Pine Nuts in Ghee
