Instructions
Step 1
Combine the bread flour, yeast, white sugar, salt, brown sugar, cinnamon, and allspice in a large mixing bowl. Add the lukewarm milk, beaten egg, and melted butter, then mix until the dough comes together. Fold in the chocolate chips and knead the dough for 8–10 minutes until it becomes smooth and elastic. If sticky, lightly flour your hands or surface without overdoing it.
Step 2
Shape the dough into a ball and place it in a greased bowl. Cover and let it rise for 1 hour in a warm, draft-free place until doubled in size. Once risen, punch down the dough and divide it into 12 equal pieces. Shape each into a smooth ball, folding the edges underneath and rolling it with your palm. Arrange the buns on a greased or parchment-lined tray, leaving small gaps between them. Cover and let rise for another 40 minutes.
Step 3
To make the crossing paste, mix the bread flour with water into a thick, smooth paste. Transfer to a piping bag and pipe crosses over the buns. Bake in a preheated oven at 190°C (375°F) for 20–25 minutes until golden brown.
Step 4
Mix the icing sugar with boiling water to create a glaze, then brush it over the buns while still hot from the oven for a glossy finish. Allow the buns to cool slightly before serving and enjoy their rich, spiced flavor.
