Instructions
Step 1
Cut tofu in small cubes, chop ginger and chili (to taste). Mix marinade with soy sauce, ginger, chili, add some water. Add tofu. Set aside to marinate for 15-20 min
Step 2
Wash potato, cut in 1cm slices. Put in oven dish, sprinkle with olive oil and salt. Wash chick peas, put in a second oven dish, sprinkle with some salt and dried chili (to taste). Put in oven 200C for c 20 min
Step 3
Wash and cut other vegetables. Prepare hummus or use ready made.
Step 4
Fry tofu in a coated pan
Step 5
Tofu could also be swapped for chicken or boiled eggs. Fresh veggies can also be swapped for whatever is available. Instead of the chickpeas, edamame or green beans are good options. Roasted red pepper or seeds/nuts are also good additions
