1chicken

40gunsalted butter
1 Tbspolive oil
40garlic cloves
in their skin
1 Tbspfresh rosemary needles
finely chopped
2bay leaves
3 sprigsthyme
1onion
large, thinly sliced
3potatoes
large, peeled and thinly sliced
3cans butter beans
drained
1 cupsundried tomatoes
roughly chopped
400mlwhite wine
200mlchicken stock
Instructions
Step 1
Preheat oven to 200°C
Step 2
Cover chicken in olive oil, salt and pepper
Step 3
Heat butter and olive oil, then add chicken to brown and remove. Add garlic, rosemary, bayleaves, thyme and onion, then beans and sundried tomatoes.
Step 4
Layer potatoes onto onions, add beans and sundried tomatoes. Add wine and stock and then chicken on top.
Step 5
Cover with foil and cook for an hour and then remove foil and cook another 15-20 minutes
Step 6
Serve chicken on top of beans and potatoes
