Instructions

Step 1
Mix all ingredients.(if making crêpes for a savory dish, omit the sugar).
Step 2
Batter should sit for 30 mns prior to cooking crepes. Batter will thicken slightly after resting. When making the first crêpe, if the batter seems too thick to flow evenly in pan, add a tbsp or so of milk.
Step 3
Use an 8" non stick pan with sloped sides. Brush pan lightly with neutral oil. Once oil is hot, pour about 1/4 cup of batter on one side of pan (use a small ladle) and vigourously shake the pan the spread batter evenly over entire pan. After a minute or so, flip crêpe and cook other side.
