French Crushed Chickpea and Artichoke Salad

This is a family favorite. We've eaten it many times at family events. It tastes so good and we love it. We originally got it from Modern Day Oregon Trail website but that site is now down so we are unable to link.

Instructions

Step 1
Step two: Put the drained and rinsed chickpeas into a medium sized bowl. Use a fork or potato mashed to smash them up.
Step 2
Step three: Add the artichoke hearts, bell peppers, cucumber, olives (we took these out), onion, parsley, oil, balsamic, and lemon juice. Mix all of that up, add some salt and pepper.
Step 3
Step four: If you are making any sides (we did some fries), or wanting to toast the bread, do so now and serve this salad on some hot toasty bread like Quiznos.
Step 4
Step five: Serve it up and eat like a king.
