This French Salad is inspired by the lentil salad in my favourite French restaurant in London called La Petite Maison. This is a quick salad which you can eat as a side dish or on its own.

Ingredients
3 servings
1 cupbrown lentils
or green
1 cupmint
1carrot
large, diced
2shallots
small, diced
1cucumber
large, diced with seeds removed
1 cupchicken stock
or vegetable
1bay leaf
For the honey mustard dressing
Instructions
Step 1
In a small saucepan on medium high heat, add in the lentils, chicken stock and bay leaf. Close the lid and cook for lentils for about 15 mins or until firm to bite basically al dente.
Step 2
Remove from the heat and allow lentils to cool down for 10 to 15 mins.
For Honey Mustard dressing
Step 3
In a small mixing bowl, add all the ingredients and whisk together until well incorporated.
Lentil Salad
Step 4
In a large bowl, add the diced carrots, shallots and cucumber. Add in the lentils, mint and dressing. Use a large spoon to mix all the ingredients until the salad is coated in the dressing. Enjoy !
