Instructions
Cooking the beans
Step 1
Soak the beans in a pan overnight, or on the day for a few hours to soften
Step 2
Drain the water from the beans and place them back in the pan
Step 3
Fill the pan with water just above the beans and add salt to taste
Step 4
Boil the beans for 35 minutes. IMPORTANT: watch the beans and add water so the water doesn't run out
Step 5
Add the bicarbonate of soda to the beans and stir
Step 6
Cook the beans for 5 more minutes or until soft
The sauce
Step 7
Slice 1 onion and quarter the other
Step 8
Pour enough oil to fill the bottom of another pan
Step 9
Fry the sliced onions until golden
Step 10
Blend 1 can of chopped tomatoes with a scotch bonnet and the quartered onion
Step 11
Add the beans and blended mixture to the frying onions
Step 12
Season with crayfish powder (can be overpowering so add a little at a time), ground nutmeg, garlic powder, adobo and any other seasonings of your choice
Step 13
Cook the stew for 15 minutes or until thick
Step 14
Serve with rice or fried plantain
