Instructions
Step 1
Combine vegetable ingredients in a food processor until they form a paste.
Step 2
In a Dutch oven, heat olive oil until hot, then sautee the paste until it is aromatic. Push it to the outside of the do and add additional olive oil. Then sautee chicken until it is browned and cooked, gradually combining with the vegetable paste. Season to taste. Deglaze with white wine.
Step 3
After rinsing your rice of choice, add to the chicken/vegetable mixture. Approximately two cups, but to taste. Cover with chicken broth, and stir to combine.
Step 4
Turn the heat down to low and cover. Check periodically until rice is cooked.
Step 5
Once Rice is cooked, season to taste and add several TB's of butter. Then stir in parmesan cheese to taste.
