1 lbchicken thighs
trimmed and cubed, defrosted

1 cuplentils
green or brown, rinsed

2 Tbspolive oil

1yellow onion

2celery stalks
diced

1 cupfresh broccoli florets
chopped, optional

4 cupschicken broth

1 cupvitamin d milk

Step 1
Preparation
Sear the Chicken: Heat olive oil in a large pot over medium-high heat. Season the chicken with salt and pepper. Brown for 2–3 minutes per side until golden. Remove and set aside.
Build the Base: In the same pot, add the onion, garlic, jalapeño, carrots, celery, and broccoli (if using). Sauté for 5–7 minutes until softened. Stir in smoked paprika, cumin, chili powder, and thyme.
Simmer the Stew: Add the chicken broth and Worcestershire sauce to the pot. Stir in the lentils and return the chicken to the pot. Cover and simmer for 25–30 minutes, stirring occasionally, until lentils are tender and chicken is cooked.
Incorporate Creaminess: Stir in the milk and Parmesan cheese. Allow the stew to simmer uncovered for 5 minutes to meld flavors. Taste and adjust seasoning with salt and pepper.
Serve and Garnish: Ladle the stew into bowls. Garnish with fresh parsley or thyme and a light sprinkle of Gouda for a final touch of richness.
