If you’re looking for a super easy and quick breakfast or snacks that packed full of protein and nutrients, then you NEED to make these delicious breakfast muffins!
It’s also a great way of using up any veggies you have left in your fridge.

INGREDIENTS
▪️4 broccoli florets, finely chopped
▪️1 cup of sweetcorn
▪️3 spring onions, chopped
▪️6 eggs
▪️200g cottage cheese
▪️1 cup self raising flour
METHOD
▪️Preheat oven to 180c
▪️In a bowl mix together all the ingredients
▪️Pour into a prepared muffin tray
▪️Top with cheese (optional)
▪️Bake for 15-20 minutes
