Instructions

Preheat your oven to 425°F (220°C).

In a large baking dish or sheet pan, add the cherry tomatoes, diced bell peppers, and chopped jalapeños. Drizzle generously with olive oil, season with salt and pepper, and toss to coat.

Slice off the top of the garlic head to expose the tops of the cloves. Drizzle the exposed cloves with olive oil, then wrap the garlic head in foil. Place it on the same baking dish.

Add the Feta:

Nestle the feta blocks into the center of the pan with the vegetables. Drizzle a little olive oil over the feta.

Roast the mixture in the oven for 30-35 minutes, or until the tomatoes are blistered, the feta is golden and softened, and the garlic cloves are soft and caramelized.

Cook the Aromatics:

While the vegetables and feta roast, heat a large pot over medium heat. Add a splash of olive oil and sauté the diced onion until softened and golden (about 5-7 minutes).

Combine the Ingredients:

Remove the roasted vegetables, feta, and garlic from the oven. Carefully transfer the vegetables and feta to the pot with the onions.

Unwrap the roasted garlic, let it cool slightly, and squeeze the soft cloves into the pot.

Add the fire-roasted diced tomatoes, tomato sauce, and coconut milk to the pot. Stir everything together.

Use an immersion blender to blend the soup until smooth. Alternatively, transfer the mixture in batches to a blender, being careful with the hot liquid.

Adjust Consistency and Seasoning:

If the soup is too thick, add water or broth to reach your desired consistency. Taste and adjust seasoning with salt and pepper.
