Chilli Butter Bean Stew on Zesty Garlic Greek Yogurt

Ingredients
2 servings
1can butter beans
1shallot
small, finely diced
3garlic cloves
minced
1red chilli
minced
½ Tbsptomato paste
½ cuptomato passata
0.5stock cube
1bay leaf
1 Tbspchilli oil
crispy
1 Tbspbutter
sea salt
olive oil
For the yogurt
½ cupgreek yogurt
1garlic clove
minced
0.5lemon
Juice and zest from
1 Tbspparsley leaves
finely chopped
sea salt
Other ingredients
Instructions
Step 1
Heat a small amount of olive oil in a pan then add the shallot, garlic and chilli with a pinch of salt and sauté for 2-3 minutes
Step 2
Add the tomato paste and sauté for a further 2 minutes
Step 3
Dissolve the stock cube in about 50ml of hot water and add to the pan with the passata, bay leaf and the can of beans. (I love to use the bean liquid as it creates a nice silky consistency but you can also drain and rinse the beans if you prefer)
Step 4
Let this simmer away for 5 - 10 minutes or until the sauce has thickened to the consistency shown in the video
Step 5
Add the chilli oil and butter, give it a stir then turn off the heat and remove the bay leaf
Step 6
Whisk all of the yogurt ingredients together then spread out on a plate
Step 7
Top with the beans, extra parsley and serve with warm bread and enjoy!
