Step 1
Grab your biggest pot and melt that butter with oil over medium-high heat. Toss in your chopped onions and let them soften up for a few minutes. Add the garlic - your kitchen's gonna smell amazing!
Step 2
Now for the star of the show - throw in those mushrooms and half your thyme. Let them cook down until they're nice and soft. Pour in your wine and let it bubble away for about 3 minutes.
Step 3
Sprinkle the flour over everything and keep stirring (nobody likes lumps!). Slowly pour in your broth while stirring - this is where the magic happens.
Step 4
Add your seasonings and those bouillon cubes. Turn down the heat and let it simmer until it gets nice and thick, about 10-15 minutes.
Step 5
Here's the good part - pour in that cream nice and slow. Give it a taste and add more salt if needed.
Step 6
If it's too thick, splash in some more broth. Too thin? Just let it bubble away uncovered for a bit.
Step 7
Finish it off with fresh herbs, saving some for sprinkling on top.

Serve it up hot with some crusty bread on the side - perfect for dunking!
