1red onion
thickly sliced

1yellow pepper
deseeded and cut into thick rounds

1red pepper
deseeded and cut into thick rounds

1courgette
zucchini, cut into 1-cm slices

198gcan sweetcorn
drained

60gblack pitted olives

1 Tbspza’atar

1 Tbspolive oil

1 Tbspbalsamic vinegar

100mlpassata

8cumberland sausages

Instructions
Step 1
1 Preheat the oven to 180°C fan (400°F/Gas 6). Line a baking dish with parchment or foil.
Step 2
2 Mix the onion, peppers, courgette, sweetcorn and olives together in a bowl. Season with salt and pepper then add the za’atar and pour over the olive oil, vinegar and passata. Stir together, then tip into the lined baking dish in a flat-ish layer.
Step 3
3 Sit the sausages on top then close up the parcel and bake in the oven for 30 minutes.
Step 4
4 Open up the parcel and return to the oven for another 20 minutes to add some colour and flavour to the sausages and vegetables.
