Blank Slate Custard Ice Cream

Use this as the base for all custard ice creams. No matter what you do, ensure the sugar and dairy ratios remain the same.

Instructions

Step 1
Boil the dairy and sugars, to a rolling boil
Step 2
Temper the egg yolks and whisk into the dairy mixture
Step 3
Heat the custard to 180°F and place immediately in the freezer to cool
Step 4
Once cool to the touch, transfer to the refrigerator to cure overnight
Step 5
Churn and deep freeze.
