Cook the Potatoes:

Heat 2 tbsp olive oil in a large skillet over medium heat.

Add diced potatoes, season with salt, pepper, and paprika, and cook for 12–15 minutes, stirring occasionally, until golden and crispy.

Remove the potatoes from the skillet and set aside.

Sear the Steak Bites:

In the same skillet, heat the remaining 1 tbsp olive oil over medium-high heat.

Season steak cubes with salt and pepper.

Sear the steak in a single layer for 2–3 minutes per side until browned.

Remove the steak and set aside with the potatoes.

Make the Garlic Butter Sauce:

Reduce the heat to medium and melt the butter in the skillet.

Add minced garlic, thyme, and rosemary, and sauté for about 1 minute until fragrant.
