I know it sounds like a lot of ingredients and a lot of steps but each one builds the flavor that sets a batch of Texas Red apart from all the imitators!

Instructions

Step 1
Brown hamburger meat when mostly done add finely minced garlic and cook until completely done. Add kosher salt and pepper to taste as cooking
Step 2
Saute onions add salt to taste
Step 3
Roast hatch chili's and jalapeño in air fryer or oven at 350 for 30 minutes turning midway. Add time as necessary until peppers are soft and nicely charred.
Step 4
Place peppers in sealed plastic bag with majority of air removed for 30 minutes
Step 5
Add meat, onions, 1/2 spice blend, 1 box chicken and 1 box beef broth to large, heavy bottom stock pot and heat to a medium simmer stirring often
Step 6
Remove peppers from bag and using a spoon remove skin, stems, seeds and ribs. Rough chop in half or quarters then place in blender. Add tomato sauce. Blend until mostly smooth.
Step 7
Add pepper blend to stock pot.
Step 8
Continue to stir frequently for 15 minutes
Step 9
Saute tomato paste until color changes to deep red. Move it around often as it will burn in a heartbeat

Add tomato paste to pot

Lower heat to a slow simmer and cook for 2 hours stirring occasionally
Step 12
Taste chilli, add up to 1/2 remaining spice mix as needed. This is a personal preference thing. Add slowly. You can always add more but you can't take it out!
Step 13
Cook for another hour stirring occasionally.
Step 14
Do a tasting and add kosher salt and black pepper to taste. Cook for 15 minutes
Step 15
Do a final tasting and add spice mix, salt, and black pepper as needed.
Step 16
Cook 15 more minutes. Serve and enjoy!
