Step 1
Combine beef, chorizo, pepper, and salt in 12" nonstick skillet. Cook over medium-high heat until beef is no longer pink, 6-8 minutes, breaking up meat with wooden spoon. Stir in onion and poblano and cook until softened, 6-8 minutes. Add garlic, cumin, and chipotle and cook until fragrant, about 30 seconds.
Step 2
Stir in tomatoes and water and bring to a simmer. Reduce heat to medium-low, cover, and continue to cook until tomatoes are beginning to break down, about 10 minutes. Off heat, stir in parsley. Serve with tortillas.
