Slow Cooker Butter Chicken

Instructions

Step 1
Sauté the onion in coconut oil

Add the following and cook until fragrant (about 30 seconds)
minced gingerminced ginger1 Tbsp
curry powdercurry powder1 ½ Tbsp
garam masalagaram masala1 Tbsp
chili powderchili powder1 ½ tsp
saltsalt¾ tsp
can tomato pastecan tomato paste1

Transfer the onions to a 6-quart or larger slow cooker
Step 4
Layer the following on top of the onions
boneless skinless chicken breastsboneless skinless chicken breasts2 lbs
broccolibroccoli
can tomato saucecan tomato sauce1
Step 5
Stir to combine the florets and sauce, leaving the chicken as is underneath
Step 6
Spread the sauce and florets so they are evenly coated
Step 7
Scatter butter pieces on top
butterbutter2 Tbsp
Step 8
Cover and cook on high for 1 ½ - 2 ½ hours OR low for 4-6 hours until the chicken is cooked (but not dried out)
Step 9
REMOVE CHICKEN and let it cool
Step 10
Start cooking the rice

If florets are not tender, stir and cook on high until they are

Cut the chicken into pieces and return to slow cooker
Step 13
Stir in half & half
half & halfhalf & half½ cup
Step 14
Let it cool for a bit and then add Greek yogurt (not too soon or it will curdle)
