Step 1
Cover both sides of the steak in your favorite bbq rub.
Step 2
Smoke on pellet grill at 250 degrees until dark color is achieved. Around 2 hours.
Step 3
Once the desired color is achieved pull the steaks off the grill. Wrap each steak in Aluminum foil add 1oz of apple sauce, 1 oz of beer, 1 Tbsp brown sugar, 2 Tbsp butter, a couple shakes of rub. Wrap each steak up tightly and place back on smoker.
Step 4
Use a probe to test tenderness after 45 minutes of being wrapped. When probing the steaks it should feel like pushing it into butter. Usually the temperature that this occurs at is around 203 degrees.
Step 5
After desired tenderness is achieved turn the grill up to sear as high as it can go. Sear 2 minutes per side until slightly charred.
