Ingredients

1can black beans
1can pinto beans
1can light red kidney beans
1can Dark Red Kidney Beans
1yellow onion
4roma tomatoes
2cloves garlic
2green peppers
1red pepper
1yellow pepper
2 lbground beef
1 packetmild chili seasoning
1 jugtomato juice
olive oil
salt
to taste
pepper
shredded sharp cheddar
sour cream
green onions
oyster crackers
Instructions
Step 1
Heat onions in oil until translucent
Step 2
Add all peppers, chopped into half inch chunks. Add garlic, finely chopped. Cook until peppers are softening
Step 3
Add tomatoes cut into half inch chunks
Step 4
Brown ground beef in a skillet. Add half the chili seasoning once brown. Do not drain.
Step 5
Add ground beef to the pot / slow cooker with veggies
Step 6
Drain beans and add to the pot / slow cooker
Step 7
Add half to three quarters of the jug of tomato juice (if using slow cooker, fill it up)
Step 8

Bring to a boil and reduce to a simmer if using a pot. Cook for an hour or longer. If using a slow cooker, cook on high for 3 or more hours.
Step 9

Serve with sharp cheddar, sour cream, green onions, and oyster crackers
