Ingredients

2 cupsgluten free flour
1:1

1egg

¾ tsppink himalayan salt

3 Tbsphoney

1 Tbspapple cider vinegar

⅓ cupcoconut sugar

⅓ cupallulose

2 tspvanilla extract
¼ cuplions mane powder

2 cupno sugar added dark chocolate chips

3 Tbspunsweetened almond milk
original

6 Tbspunsalted butter

½ tspbaking powder

½ tspbaking soda

½ cupunsweetened coconut flakes

Instructions
Step 1
Melt butter in large glass mixing bowl. Add sugars, milk, vanilla, salt honey, vinegar, and egg. Mix really well.
Step 2
In a separate bowl, combine dry ingredients. Flour, bak8ng powder, baking soda and mushroom powder.
Step 3
Add dry mixture to wet mixture. Combine well.
Step 4
Fold in chocolate chips and coconut flakes.
Step 5
Refrigerate for 1 hr. This step can be skipped if you prefer flatter cookies. Fluffy cookies require refrigeration.
Step 6
Preheat oven to 350° F. Shape dough into 2 inch balls on cookie sheet. Flatten the balls slightly. These cookies are fluffy and don't flatten much on their own.
Step 7
Bake cookies for 12-16 min. Let cool for 10min and enjoy!
