Step 1
First pat the chicken breasts dry with the kitchen roll then cut them into bite sized pieces. Put the chicken pieces in a mixing bowl and add the cornflour. Mix together so that the all the chicken is coated well in flour. Season well with salt and pepper then spray with olive oil. Mix together again then put the seasoned chicken directly into the air fryer drawer with the crisper tray removed. Or use an oven proof dish that fits into your air fryer.
Step 2
Cook on 200°C for around 8 minutes until the chicken starts to brown. Stir the chicken half way through the cooking to ensure that it cooks evenly.
Step 3
Once the chicken has started to brown add the dried oregano, smoked paprika, half of the grated parmesan, garlic puree, tomato puree, single cream, chicken stock and sun dried tomatoes.
Step 4
Stir the ingredients together well and cook for a further 8 to 10 minutes or until the sauce starts to thicken.
Step 5
I served mine with pasta but you can serve yours with rice. Sprinkle with fresh basil leaves and the rest of the grated parmesan cheese.
