Air Fryer Chicken Fajitas

This air fryer chicken fajitas recipe is a perfect “cheat” meal! I usually make my own fajita seasoning, but sometimes life just gets so busy that you have to go easy on yourself and just use the packet mix!

Ingredients
2 servings

2chicken breasts
sliced into strips, beef or pork also work just as well

vegetable oil

Fajita seasoning mix
store bought or home made

2mixed peppers
de-seeded and sliced

1brown onion
peeled and sliced

6flour tortilla wraps
medium

Iceberg lettuce
washed and sliced

Jalapeno chilli peppers
Sliced, if you like it spicy

Grated cheeses

sour cream

fresh coriander
chopped

lime

Instructions
Step 1
Start by cutting your chicken breasts into strips and placing in a mixing bowl. Drizzle with olive oil then add your fajita seasoning. And mix well with your hands or a spoon until all the chicken strips are coated in seasoning. Then marinate the seasoned chicken for at least an hour in the fridge. Of course the flavour will be better if you marinate them for longer or better still overnight in the fridge.
Step 2
Then peel and thinly slice your onions, and de-seed and slice your peppers into strips. Add your vegetables to the mixing bowl with the marinated chicken and mix well. Transfer the ingredients directly into your air fryer drawer, leaving the crisper plate in. You could use an oven proof dish or liner to keep your air fryer clean. And cook on 200C for around 15 minutes, shaking the air fryer basket twice during this time to ensure an even cook.
Step 3
Before serving, warm your tortilla wraps in the microwave for about 1 or 2 minutes.
Step 4
Then serve your air fryer chicken fajitas with your sour cream, grated cheese, sliced jalapenos and sliced iceberg lettuce.
