Instructions

preheat oven to broil
Step 2
for marinated tomatoes: in a small bowl toss the tomatoes with oil, pesto and balsamic reduction. Season with salt and pepper. Set aside

For chicken: In a large skillet, heat the oil and butter over medium-high heat. Season chicken with salt and pepper then add to skillet. Cook until golden and just cooked through, about 3 mins per side. Top each piece with a large basil leaf and slice of mozzarella. Transfer to the broiler and cook til mozzarella is melted about 2-3mins.
Step 4
remove from skilled from the oven and top with marinated tomatoes, making sure not to completely cover the chicken. Drizzle some balsamic reduction over the top and add some more basil.
Step 5
serve with toasted ciabatta
