The Pizza Dough
800gstrong bread flour
1 tspnigella seeds
½ tspsalt
2 Tbspolive oil
400mlwater
room temp
1 tspyeast
1 tspsugar

Instructions
The Pizza Dough
Step 1
Mix the yeast with the water and sugar and let sit for 10 minutes
Step 2
Mix the flour with the salt, nigella seeds, and 1 tbsp olive oil
Step 3
Add the wet to the dry, combine and knead for 10 minutes
Step 4
Add 1 tbsp oil to a bowl, sit the dough in and cover with cling film, then rest in the fridge overnight or room temp for 2 hours.
Step 5
Separate into 4 and form in balls, cover and rest for an hour at room temp.
The Pesto
Step 6
Toast the pine nuts in a pan on medium heat for 2-3 minutes. Keep an eye on them as they can burn very fast. If this happens you need to start over.
Step 7
Add all the ingredients to a blender and blend for a couple of minutes into a paste.
The Pizza

Grate the Mozzarella and slice the chorizo and chillies
Step 9
Get your biggest frying pan on a very high heat, and your grill/broiler on max.
Step 10
Hand stretch the dough out to the size of the pan, and drop it down.
Step 11
Spoon out a quarter of the pesto, leaving an inch around the edges for the crust.
Step 12
Lay a quarter of the grated mozzarella and sliced chorizo and chilli.
Step 13
After it has been frying for 3-5 minutes and the bottom has started to blacken, pull it out and stick it under your hot grill/broiler until it starts to char.
Step 14
Repeat the process for the other 3 pizzas and you’re good to go!
Step 15
If there’s any pesto left, add some Mayo it makes a great dipping sauce
