BBQ Chicken Salad

Instructions

Chicken

Step 1
Combine the marinade ingredients in a ziplock bag and squish to stir.
Step 2
Add the chicken to the bag, close the bag, and shake to coat the chicken with the marinade ingredients.
Step 3
Let the chicken marinate in the fridge for 10 mins to 24 hours.
Step 4
Set the top rack of your oven to a position so that the top of the broiling pan is 4-6 inches (10-15 cm) away from the broiler. Preheat the oven on broil.
Step 5
Place the pan under the broiler and cook for 7 minutes. Turn the chicken over and cook for an additional 5 minutes. The chicken will be slightly charred and should be a minimum internal temperature of 180 degrees F.

Veggies

Step 6
Place the bag of corn in the microwave and cook according to package instructions.
Step 7
Place the salad mix in a large serving bowl.
Step 8
Cut each tomato in half and add to the serving bowl.
Step 9
Slice the green onion and add to the bowl

Finish

Step 10
Add the chicken to the salad. Sprinkle the tortilla chips/strips over the top. Serve with ranch and bbq sauce.
