Step 1
First, chop the spring onion and sauté it in a pan with a drizzle of oil until slightly golden. Then, add the diced salmon and cook it through.

Meanwhile, prepare the batter by mixing eggs, milk, salt, and pepper.
Step 3
Once the salmon is cooked, add it to the batter along with chopped tomatoes and Taggiasca olives. Stir well, then add the Parmesan cheese.
Step 4
Line a baking tray with parchment paper and roll out the puff pastry. Sprinkle some breadcrumbs on the bottom, then pour the mixture into the mold. Finish with another sprinkle of breadcrumbs.
Step 5
Bake at 180°C (350°F) for about 30 minutes.
