Instructions
Step 1
1. Combine dry ingredients, then mix in olive oil + sourdough discard until a dough ball forms.
Step 2
2. Let dough hydrate in fridge for at least 30min.

3. Roll out dough between two pieces of parchment.
Step 4
You want it to get as thin as possible. Remove top parchment and top the rolled dough w flaky salt and sumac or Aleppo pepper, really whatever you're feeling.
Step 5
4. Cut into 1-inch squares and use a fork to poke a hole into the center of each cracker.
Step 6
Bake at 350 for 25 min, rotating at 10.
