Step 1
Dice the chicken. Chop chillies finely. Peel & chop onions and garlic. Heat oil in large pan and fry the chicken for 3-4 mins to brown, then transfer to a plate. Add onions to pan, cook for 5 mins until transparent. Add the garlic then the chillies and fry for 1 min. Add the tomatoes, cumin & tomato purée and simmer uncovered for 15 mins. Preheat oven to 200 fan bake. Chop red capsicum finely & add to tomatoes. Drain sweetcorn and beans & rinse under cold water. Mix into the tomato pan & add the chicken too. Bring to the boil then spoon into baking dish. Mash the softened butter, breadcrumbs and cheese together and dot/sprinkle over chilli. Bake in oven until top is crispy.
