Ingredients

2 lbschicken breast

8 cupschicken broth
or stock

2 cupswater

3carrots
peeled and sliced

3celery stalks
sliced

1yellow onion
large, diced

2 tspsgarlic
minced

2 cupsegg noodles
wide

2chicken bouillon

1 teaspoonsalt

½ teaspoonpepper

½ teaspoondried thyme

½ teaspoondried parsley

1bay leaf
optional

2 cupsegg noodles

1 tablespoonolive oil

¼ teaspooncelery salt

½ teaspoondried cilantro

¼ teaspoongarlic powder
Instructions
Step 1
In a large pot, heat the olive oil over medium heat. Add the chicken and sear for 2–3 minutes per side (this adds flavor).





Step 2
Pour in the chicken broth and water, then bring to a simmer. Cover and cook for 15–20 minutes or until the chicken is fully cooked.



Step 3
Remove the chicken, shred it with two forks, and set it aside.


Step 4
Add the carrots, celery, onion, and garlic to the broth. Simmer for 10–15 minutes until the vegetables are tender.






Step 5
Stir in the noodles and cook according to package instructions (usually 6–8 minutes) until tender.


Step 6
Return the shredded chicken to the pot. Stir in thyme, parsley, salt, and pepper. Let it all simmer for 5 more minutes. Remove the bay leaf.
