Cheese Cauliflower Crust Pizza

Instructions

Step 1
Thaw the frozen cauliflower in the microwave. Blend up the cauliflower until it's a fine texture, almost like a wet powder.
Step 2
Spread the cauliflower on a baking sheet lined with parchment paper and bake at 400°F for 30 minutes. Remove from oven and allow to cool.
Step 3
In a kitchen towel, squeeze the cauliflower to remove excess moisture. Mix together the cauliflower with the eggs and half of the salt.
Step 4
Spread the cauliflower mix onto the parchment lined pizza pan and press into a 12-inch circle. Bake at 400°F for 8 minutes.
Step 5
While the crust bakes, prepare the toppings. Toss cherry tomatoes with the basil & remaining salt in a small bowl.
Step 6
Remove it from the oven and and flip the crust over by sandwiching the crust between two parchment papers and quickly flipping the crust back over onto the pizza pan. Tip: slipping the crust and the parchment paper off of the pizza pan and onto a large cutting board. Then place a parchment sheet on the top of the crust. Now flip the cooled pizza pan upside down over the new parchment. This will help you quickly flit it over.
Step 7
Now place Then evenly spread the tomatoes and basil on top. Sprinkle mozzarella cheese on top, and then bake pizza at 400°F for about 10 to 12 minutes until golden brown.
Step 8
Cut the pizza into 8 equally-sized pieces (2 slices per serving).
