For the cake:

1 cupGuinness stout

1 cupunsalted butter

¾ cupunsweetened cocoa powder

2 cupsgranulated sugar

⅔ cupsour cream
or plain greek yogurt

2eggs
large

1 tablespoonvanilla extract

2 cupsall-purpose flour

2 ½ teaspoonsbaking soda

½ teaspoonsalt

½ cupdark chocolate
chopped, or chocolate chips, optional but recommended
For the frosting:
Optional: chocolate ganache topping
Instructions
Make the batter
Step 1
Preheat and prep. Heat oven to 350°F. Grease and line two 9-inch cake pans with parchment paper.




Step 2
Melt and mix. In a saucepan over medium heat, melt the butter. Stir in Guinness and cocoa powder, whisking until smooth. Remove from heat and whisk in sugar.





Step 3
Add wet ingredients. In a separate bowl, whisk together sour cream, eggs, and vanilla extract. Slowly mix into the chocolate mixture.




Step 4
Combine dry ingredients. Sift together flour, baking soda, and salt. Gradually fold into the wet ingredients until smooth. Stir in chopped chocolate or chocolate chips if using.






Bake
Step 5
Divide and bake. Pour the batter evenly into the prepared cake pans. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let cool completely.

Frost the cake
Step 6
Make the frosting. Beat cream cheese and powdered sugar until smooth. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold into the cream cheese mixture along with vanilla extract.





Step 7
Assemble. Place one cake layer on a plate. Spread a generous amount of frosting on top. Place the second layer on top and frost the top and sides of the cake.
Optional: Add ganache
Step 8
Make the ganache. Heat heavy cream until just simmering (don’t boil). Pour over the chopped chocolate and let sit for a minute. Stir until smooth, then mix in the butter.




Step 9
Drizzle and set. Pour the ganache over the top of the cake, letting it drip slightly over the edges. Let it set before serving.
