Instructions

Preheat your oven to 350ºF.

In a mixing bowl, whisk together the flour, powdered sugar, and salt. Add the butter alternative and beat with a mixer or a pastry blender until you have a bowlful of sandy crumbs.

Pat the mixture firmly into a well-greased 8x8-inch pan.

Bake the crust for 20 minutes.

As the crust bakes, whisk together the sugar, flour, and baking powder in a medium bowl.

Add the eggs, lime juice, and lime zest, and whisk until smooth.

Pour the filling over the partially-baked crust and bake the bars for 25 minutes.

Let the lime dessert cool completely.

Sift powdered sugar over the top.

Using a sharp knife, cut the dessert into fourths each way to make 16 squares.
