Summer Pudding

For those that feel they need a sweet dessert whilst trying to lose weight, our summer pudding recipe will hopefully satisfy any sugary cravings, but for relatively few calories, as its energy density is well below 1 calorie per gram. This pudding is also high in fibre and so should keep you much fuller than other high calorie, low nutrient offerings.
While berries are primarily used in this recipe, any preferred summer or winter fruits can be substituted in their place without it raising the low energy density. You can even spice it up with some cloves and cinnamon. Serve with Greek yoghurt, sour cream or even a low energy dense ice-cream or custard.

Step 1
Peel and core the apple and then cut it into small cubes. Add these to a large saucepan with the frozen berries, 2 tablespoons of water and 1 tablespoon of honey. Heat, slowly, allowing the fruit to soften. Pour the fruit into a sieve, draining the juice into a bowl.
Spray a 900ml pudding bowl with light oil, then line it with cling film
Cut off the crusts from 6 slices of wholemeal bread. Dip each slice into the juice from the fruit. Place the bread into the base and sides of the bowl, slightly overlapping the edges, taking care not to leave any gaps. Spoon in all the fruit, pressing down slightly. Place the remaining bread over the top, folding over the edges to completely seal in the fruit. Pour over any remaining juice.
Place a saucer on top of the pudding and weigh it down with something heavy. Leave in a fridge overnight.
To serve, take off the saucer, flip the bowl over onto a serving plate and remove the cling film. Serves 4
