This recipe takes me back to my uni days. My mum and I would always have hunter's chicken when I would visit and it is still one of my favourite recipes. Sausage elevates the barbecue flavours but feel free to swap them for chicken or turkey sausages f o r a higher protein version!

Step 1
Preheat the oven t o 180°C/160°C fan.
Step 2
Wrap each sausage in a piece of bacon. Place in a large casserole dish or baking tray. Add the sweet potato, red onion and red pepper, arraning them around the sausages
Step 3
Season all over with salt, pepper and the barbecue seasoning and then spray with low calorie cooking spray. Cook, uncovered on the middle shelf of the oven for 20 minutes.
Step 4
Once the time is up, pour the barbecue sauce over the sausages and sprinkle over the cheese. Return to the oven for a further 5 minutes
Step 5
Serve with a side salad
