Knafa

Knafa Do you call it knafa or chnafa? 1 package kataifi dough chopped 2 tbs knafa coloring divided 2 sticks melted sweet butter divided 1 16oz package sweet cheese crumbled 3 cups ricotta cheese 1/2 cup sugar For the simple syrup: 3 cups sugar 3 cup water 1 tsp Fresh lemon juice In a large bowl, combine kataifi dough, 1 tbs knafa coloring and 1 stick of melted butter. Prepare your baking pan by combining one stick of melted butter with remaining knafa coloring and coat the pan well. Place 90% of the dough into the bottom of your pan and press down well. In a bowl crumble sweet cheese add ricotta cheese and sugar. Mix until combined. Place on top of the dough without getting too close to the edges of the pan. Top with remaining dough and bake at 400° for 25-30 minutes until crisp. While in the oven make simple syrup by combining sugar water. Bring to a boil and add fresh lemon juice. Boil for an additional 10 to 15 minutes until it thickens and coats the back of a spoon and then move to the side to cool. Flip knafa out of the pan and top with simple syrup (to your taste I usually do 1 1/2-2 cups). Cut into pieces. If desired top each piece with chopped pistachio and enjoy. . . .
