Ingredients

olive oil

2 lbsboneless skinless chicken breast
cut into bite-sized pieces

1onion
large, finely chopped

2carrots
large, grated or cut into 2-inch thin strips

3 cupsbroccoli
chopped into 2-inch pieces

1 pintbaby bella mushrooms
sliced

8cloves garlic
minced

½ cuphoney

½ cuplow sodium soy sauce

¼ cuphoisin sauce

2 Tbsprice vinegar

2 tspsesame oil

1 tspred pepper flakes

16 ozspaghetti noodles
uncooked, or lo mein

4 cupslow sodium chicken broth

2 tspcornstarch
mixed with 1 cup water

¼ cupgreen onions
chopped for garnish

Instructions
Step 1
Heat oil in a large pot over medium heat. Add the chicken and cook until golden brown on all sides, about 5-6 minutes. Remove chicken and set aside.
Step 2
In the same pot, add onions, carrots and broccoli. Sauté for about 2 minutes, then add the mushrooms and garlic. Continue to sauté about 1 minute more, until fragrant and onions become translucent.
Step 3
Stir in honey, soy sauce, hoisin sauce, rice vinegar, sesame oil, and red pepper flakes. Simmer for 2 minutes.
Step 4
Add chicken broth and uncooked noodles. Stir to coat the noodles in the sauce. Cover and simmer for 10 minutes, stirring occasionally, until the noodles are tender.
Step 5
Add cooked chicken back into the pot and stir to combine. Add the cornstarch slurry and let the sauce thicken for 1-2 minutes.
Step 6
Garnish with green onions and sesame seeds before serving. Enjoy!
