Preheat oven to 350F.

2. Into a medium bowl, add the wet ingredients listed above. Mix with a spatula until combined. Next, add the dry ingredients and mix again until combined. Fold in coconut flakes.

3. Pour cake batter into a small, round greased dish. My container is about 4-5" around and 2-3" deep.

4. Bake in the oven for about 24 minutes or until a toothpick comes out clean once poked in the center.

Set aside to cool.

5. Once cake is cool, add the cool whip on top and smooth with a butter knife. Top with coconut flakes and enjoy!
