Instructions
Step 1
In a medium to large wok, heat olive oil over medium low heat
Step 2
Scramble the eggs in a bowl, optionally adding salt and pepper, and pour the scrambled eggs into the wok. Continually stir until firm but still wet. Remove eggs from the wok and set aside
Step 3
Add butter to the wok over medium heat. Once melted, add the day old rice, breaking up and stirring to remove clumps
Step 4
While the rice is warming, mix all other ingredients together. Once the rice is warm, turn the heat up to medium high and pour the seasoning mix over the rice, stirring to coat.
Step 5
After the rice is fully coated, add back the eggs. Continue stirring together until all is cooked through and liquid is fully absorbed by the rice.
Step 6
Remove from heat and serve while warm.
