Instructions
Step 1
Crack eggs into a bowl and scramble. Then pass through a strainer and set aside.
Step 2
Prep the lap cheong, onions and garlic and set aside. Cut scallion into strips and place in a cold bowl of water.

Place the old rice into a bowl and break apart the clumps with your hands and set aside.
Step 4
Heat a wok or large pan on medium to high heat. Spray some cooking spray. Using a spoon, drizzle some of the egg onto the pan to create a net like pattern. There is no need to turn it over. Once cooked, carefully transfer it to a plate and let cook for 1 minute. Then place it into a bowl where you will snap the rice. Try to make the egg conform to the shape of the bowl.
Step 5
In the same wok, add oil and heat till it is smoking hot. Add the egg and quickly scramble. Either push to the side or take out of the pan. Add the onions, garlic, sausage, and peas and carrots. Cook until fragrant and remove from wok.
Step 6
Again in the same pan, heat it till it is smoking. Add the rice. Don’t move the rice for 45 seconds to a minute. This will give it the wok hei. Add back the other ingredients and mix well. Add soy sauce and mix. Cook until rice is warmed through. Season with salt and pepper.
Step 7
Tightly pack the rice into the bowl with the egg. Make sure to adjust the egg accordingly while scooping the rice. Flip it into your desired plate. Garnish with scallion and enjoy.
