Instructions
Step 1
In a large bowl, mix the cold cooked rice with the egg yolks, chicken bouillon, oyster sauce and sesame oil until the rice is evenly coated. Set aside. Using one day old cold rice works best for fried rice. I used instant rice (but did not microwave it per instructions).
Step 2
Chop 2 green onions, separating the green and white parts.
Step 3
Heat a large pan or wok over medium heat. Add butter, then sauté the minced garlic and white part of the green onions until fragrant, about 30 seconds.
Step 4
Move the sauteed garlic and green onions to the side then add the egg whites to the pan and stir constantly until they are just cooked, forming small pieces.
Step 5
Add the rice to the pan and toss everything together until evenly mixed and cooked. This will take about 5-7 mins over medium high heat.
Step 6
Season with white pepper and green onions (green part) before serving. Mix well to combine.
