Dark chocolate covered orange pudding

Tangy, sweet, soft orange dessert covered in crunchy dark chocolate… very easy and delicious!
This recipe makes 4 individual puddings.

For the pudding

500mlorange juice
freshly squeezed

3 Tbspcorn starch

½ cupgranulated sugar
optional

½ tspvanilla essence

3 tsplemon juice
freshly squeezed

Instructions
Step 1
In a cold saucepan completely dissolve the corn starch in the cold orange juice with a silicon spatula or wooden spoon. Make sure that there are no lumps. Add the sugar (optional) and stir to dissolve most of it, then add the vanilla (optional). If oranges are very sweet, or if you want to keep calories down, you can leave out the sugar and/or the vanilla; without them theflavour will be sharper and you may need to heat it for a bit longer to thicken.






Step 2
Heat the mixture over a gentle heat, stirring constantly, until the mixture has thickened, then stir in the lemon juice, add the butter and keep stirring until it’s melted and dissolved. Take the pan off the heat.




Step 3
Wet well the inside of 4 silicone cupcake-size molds and pour the 1/4 of the mix into each. Let it cool down, then refrigerate until fully set (about 5-6 hours). You can alternatively use rigid molds, but it will be harder to unmold the puddings without cracking them.

Step 4
Once fully set, carefully unmold each the pudding onto a desert plate.
Step 5
Brake 1/4 of the dark chocolate into a small microwave-safe bowl, and microwave until fully melted. Do this 30 seconds at a time to prevent overheating the chocolate. It should take 1-2 minutes to melt it.


Step 6
Pour the melted dark chocolate over one of the puddings, and quickly but carefully spread it all over with a spatula or spoon. You need to be quick, as the chocolate will set in a few seconds. Finish with a grating of orange zest and a tiny sprinkle of salt over it.



Step 7
Repeat steps 5 and 6 on the other puddings.
Step 8

Refrigerate until served. Enjoy!
