Instructions
Rinse the Quinoa
Step 1
Rinse under cold water in a fine mesh strainer for 30 seconds to remove bitterness.
Cook
Step 2
In a medium saucepan, combine rinsed quinoa and water (or broth).

Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
Step 4
Remove from heat and let sit, covered, for 5 minutes.
Fluff and Finish
Step 5
Fluff with a fork and stir in olive oil, lemon juice, lemon zest, and herbs.

Season with salt and pepper to taste.
