I haven’t tried this yet but will be trying it soon. I’m going to try it with less beans to see if I can lower the carbs while still getting that fluffy texture we all love when it comes to mashed potatoes. There are 10 net carbs, as written.

Ingredients
6 servings
8 cupsfresh cauliflower florets
1 x 15 ouncecan cannellini beans
white kidney beans, drained and rinsed
1 cuplow-sodium chicken broth
or vegetable
1 sprigfresh rosemary
1 teaspoongarlic
fresh minced
2 tablespoonsbutter
3 ouncescream cheese
2 tablespoonsgrated parmesan cheese
¼ teaspoonsalt
plus more to taste
¼ teaspoonblack pepper
plus more to taste
Instructions
Step 1
Add cauliflower, beans, broth, rosemary and garlic to 4-quart or larger pot over high heat. Bring to boil, then reduce heat and simmer covered for 10 minutes or until the cauliflower is tender.
Step 2
Uncover and simmer for 10 more minutes or until most of the broth has evaporated. (If a lot remains, you can pour off - sometimes cauliflower can give off a lot of moisture.)
Step 3
Remove rosemary sprig and add in butter, cream cheese, Parmesan cheese, salt and pepper. Puree with hand/immersion blender or in blender or food processor.
Step 4
Taste and add additional salt and pepper if desired.
