Instructions

Step 1
Blend ricotta cream and Mascarpone cheese well with whisk.
Step 2
Blend in sugar and whisk in eggs one at a time.
Step 3
Add vanilla, lemon juice, cornstarch, flour, and butter.
Step 4
Fold in sour cream. Blend well.
Step 5
Pour into a 10" buttered spring-form pan OR if you are using a glass pan, see NOTE BELOW.

Place in a COLD oven and turn up the heat to 325°F. (163°C.)
Step 7
Bake for 1 hour. DO NOT OPEN OVEN DOOR.
Step 8
Turn off the oven and leave in the oven until cold (at least two more hours).

Put cherry pie filling or whatever topping you prefer on top.

If you use a glass pan instead of a metal pan, drop the temperature of the recipe by 25°F and increase the baking time by 5 to 10 minutes.
