Dave's Guiness Corned Beef & Cabbage with Roasted Carrots and Potatoes

Instructions

Corned Beef

Step 1
Remove all fat from the corned beef, and slice in to 1/2 by 4 inch slices
Step 2
In a large bowl mix 4 cups of flour with salt and pepper.
Step 3
In a large soup pot, add a little olive oil. Dip the corned beef in the flour, salt and pepper and add to the soup pan and cook until flour is dessloved.
Step 4
Add 2 cans of beef broth, 2 cans of Guiness Beer, All Spice, Garlic, Bay Leaves, and Brown Sugar. (Make sure liquid covers the corned beef)
Step 5
Place soup pot in oven at 450 and cook for 2 hours
Step 6
Remove Corned Beef from oven and let simmer on stove on low to medium heat.

Cabbage

Step 7
Add 1/2 of butter to a large pan.
Step 8
Cut cabbage into 1 inch of smaller pieces and add to pan
Step 9
Add 1 medium onion diced and 2 tablespoons of garlic
Step 10
Cook on medium heat until cabbage starts to brown a little

Roasted Carrots and Potatoes

Step 11
Slice Carrots into 2 inch slices, slicing diagnally
Step 12
Peel potatoes and slice into quarters
Step 13
Add to a roasting pan, add and mix with olive oil
Step 14
add 2 tablespoons of thyme and 2 tablespoons of crushed garlic.

Roast at 400 for 2 hours or until vegetables are tender

Sauce

Step 16
Mix 1 bottle of Maple Chipotle Grille Sauce or BBQ sauces in a small sauce pan
Step 17
Add 1 cup of broth from corned beef mixture and 1 can of Guiness beer.
Step 18
Add 1 tablespoon of crushed Garlic and Brown Sugar.
Step 19
Bring to boil
Step 20
microwave 1/2 stick of butter, then mix with flour to make rue.
Step 21
Add mixture to sauce to thicken, then lower heat.

Serve when everything is cooked to perfection!!

Step 22
add heated dinner rolls as an option.
