Smoke Chicken Thighs

Smoked Chicken Thighs, best chicken thighs you will eat! Use your favorite dry rub, I prefer something with a little sweetness to it.

Instructions

Step 1
Create Brine with 4 cups of water, salt, & brown sugar. Add Chicken thighs (6-8)/batch.
Step 2
Brine thighs for ~2 hours
Step 3
Heat up Smoker to 375F
Step 4
While smoker heats up, remove brine from fridge. Rense off thighs and place on cookie sheet that has two layers of paper towel. Pat tops dry and place a liberal coat of dry rub on thighs
Step 5
Place thighs on clean and oiled smoker grates folding them in half. Place meat probe in largest thigh and cook till 175F.
