I stole this recipe from my MIL who photocopied it from a cookbook. It only says Poulet Provençal. The family dog, named Sasha, ate it off the kitchen counter so it’s now dubbed Sasha Chicken at home.

Instructions

Step 1
Season cavity of chicken with 1 teaspoon of salt and black pepper and butter
Step 2
In Dutch oven, pour 2 tablespoons of oil and add garlic
Step 3
I like to add a root vegetable at the bottom like cut potatoes or carrots. Your preference but it’s delicious after

Place chicken in oven and pour remaining oil on chicken. Sprinkle with remaining salt, pepper, rosemary, adults and thyme.
Step 5
Roast chicken in a 425 degree oven for about an hour. Baste frequently towards the end when juices start to flow.
Step 6
Cook until multiple parts of chicken are at 165 internal temperature. Some people like to cook uncovered for a crispy skin. I leave it covered the whole time.
